Potato Salad With Vegan Mayo

Delicious Vegan Mayo potato salad!

This Potato Salad delicious and it's simple to make, and boy does it taste great! I make it for my family often and it doesn't last long. I used Vegan Mayo because I like the taste, but you can use any type of Mayonnaise. Make sure you use red potatoes as they are more waxy, less starchy, peel easy, and hold their shape well.



  • Red Potatoes

  • 1 1/2 Cups Mayonnaise (I used Vegan Mayonnaise )

  • 1 Can of Peas and Carrots (drained)

  • 2 Hard boiled Eggs cut in 1/4's

  • Parsley for garnish

  • 3 Pickles for Garnish (cut in fan shape)

  • 2 Chopped Pickles

  • Salt and Pepper

  • Paprika


  1. Bring whole potatoes to boil then simmer 15-20 min, do not overcook

  2. Let potatoes Cool

  3. Hard boil 2 eggs and cut in 1/4's

  4. Peel potatoes

  5. Cut potatoes in little cubes

  6. In a bowl add potatoes and chopped pickles

  7. Add mayo

  8. Add peas and carrots

  9. Add salt & pepper

  10. Gently mix PRESENTATION

  11. Flatten potatoes in a nice mound

  12. Place eggs face down in a circle

  13. Place fanned pickles between eggs

  14. Add a few sprigs of Parsley

  15. Sprinkle some Paprika, Salt & Pepper

  16. Wrap with plastic wrap and refrigerate.

  17. Enjoy!
